Curried Mayonnaise

I make this for my Curried Chickpea Salad, but it is also good on a bed of mixed greens.

Ingredients
  

  • 1 12- ounce package extra firm silken tofu
  • 3 Tbsp red Lemon juice
  • 2 tsp curry powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp sea salt

Instructions
 

  • Combine all ingredients in the bowl of a food processor with the fitted blade. Puree until smooth and creamy.
  • Store refrigerated in an airtight container for up to 5 days.
