Curried Mayonnaise
I make this for my Curried Chickpea Salad, but it is also good on a bed of mixed greens.

Ingredients
1 12-
ounce
package extra firm silken tofu

Tbsp
red Lemon juice
2
tsp
curry powder
½
tsp
onion powder
½
tsp
garlic powder
½
tsp
sea salt
Instructions
Combine all ingredients in the bowl of a food processor with the fitted blade. Puree until smooth and creamy.
Store refrigerated in an airtight container for up to 5 days.
