Curried Mayonnaise
I make this for my Curried Chickpea Salad, but it is also good on a bed of mixed greens.
Ingredients
- 1 12- ounce package extra firm silken tofu
- 3 Tbsp red Lemon juice
- 2 tsp curry powder
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp sea salt
Instructions
- Combine all ingredients in the bowl of a food processor with the fitted blade. Puree until smooth and creamy.
- Store refrigerated in an airtight container for up to 5 days.
