Pineapple Gazpacho

There are many recipes for this popular cold soup. A lot of them add cucumber which is tasty but for me, it detracts from the pineapple flavor I love so much. My version makes a pineapple salsa and sometimes I puree half of it, sometimes I don’t. It is delicious either way

Serves 4-6

Ingredients

1 whole pineapple diced, peeled, stemmed, and diced

½ red bell pepper seeded & diced

1 jalapeño seeded & diced

½ medium red onion diced

¼ cup cilantro chopped

1 lime juiced

½ teaspoon crushed red pepper

Directions

  1. Combine all ingredients in a large bowl and toss together.
  2. Remove half of the mixture to a blender and puree until smooth
  3. To serve: spoon some of the non-pureed soup into a bowl and drizzle some of the pureed soup around it.
